Mango and Basil Fizz Mocktail
I am finally starting to feel better after two weeks of withdrawal symptoms from Effexor. My mind feels clearer and the brain zaps are getting better every day. I have to admit, in the last few weeks, I have completely given up on following Weight Watchers and I have also been drinking way too much Rosé (the phrase Rosé all day has hit a little too close to home). I have gained 10 pounds! It would be easy to say “I have been going through so much lately, I have to give myself a break.” The truth is, eating like shit and drinking too much is NOT a form of self-care. I need to get my act together!
I have decided to make a tasty Mango and Basil Fizz Mocktail. The recipe I have created can be made Weight Watchers friendly by making a simple syrup with stevia instead of sugar. You can also swap out the mango juice with Diet Cran-Mango juice (0 WW points for 8 oz.). Mocktails are becoming increasingly popular as adults are seeking healthier alternatives to classic cocktails. I picked up Dry: Non-Alcoholic Cocktails, Cordials and Clever Concoctions recently and love how Clare Liardet adds complexity to the flavors with herb infused simple syrups, teas and juices.

Mango and Basil Fizzy Mocktail

Total Time: 15 Minutes Yields: 1 Servings
Ingredients:
4 oz mango juice
1 pinch of pink himalayan salt
2 TBSP basil simple syrup *see recipe below
ice
4 oz sparkling water
1 basil leaves for garnish
sliced mango for garnish
Instructions:
Add mango juice, salt, basil simple syrup in the bottom of a tumbler and stir. Fill glass with ice and top off with sparkling water. Garnish with basil leave and sliced mango.
*To make simple syrup, add 1 cup of sugar and 1 cup of water to a small sauce pan over low heat. Stir with a whisk until sugar dissolves. Add 4-5 leaves of fresh basil and continue to simmer for 5 minutes. Remove basil leaves and store in a sanitized jar. Use as needed for your favorite mocktails!
